Background
Dr. Kate Hoy is an assistant professor in Nutrition and Foods at Appalachian State University and a Registered Dietitian (RD). In addition to teaching graduate and undergraduate classes, she maintains a private practice emphasizing performance nutrition.
Before coming to App State, Dr. Hoy implemented and evaluated nutrition assistance programs in the Carolinas and across the country including the: Supplemental Nutrition Assistance Program - Education (SNAP-Ed), the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) and the National School Lunch Program (NSLP). Dr. Hoy had the pleasure of working with the Secretary of Agriculture Tom Vilsack and the Food and Nutrition Service (FNS) in the U.S. Department of Agriculture (USDA) to update the Healthy, Hunger-Free, Kids Act of 2010 and continues to serve FNS as a grant reviewer annually.
Dr. Hoy’s research focuses on the intersection of business, nutrition behaviors, vulnerable populations and public health with a specific interest in contextual evaluation of nutrition assistance programs and subsequent health outcomes.
